Banana Bread

There's nothing I love more than baking, I'm actually really surprised that I haven't done any on here yet. This recipe is one that I love and I pretty much know the recipe off by heart as I've made this banana bread so many times. You could also use this recipe to make banana muffins if you just scoop the mixture into muffin cases and reduce the baking time.

  • 3 bananas (cut into circles, the riper the better)
  • 4 tablespoons golden syrup
  • 1 1/2 cups caster sugar
  • 2 eggs
  • 2 cups self-raising flour
  • pinch of salt

1. Preheat your oven to 180°C (355°F) and grease and line the base of a loaf pan.

2. Mash up the bananas using a fork in a medium bowl (you could use one of those potato masher things but I like to use a fork as then it gets mashed up more finely).

3. Add the golden syrup and sift in the sugar. Stir in using a wooden spoon.

4. Add the eggs, and sift in the flour and salt bit by bit whilst mixing until fully combined.

5. Pour mixture into the loaf pan and bake for 45 minutes or until a skewer inserted into the centre comes out clean.

6. Allow to cool in tin for 10 minutes, then transfer to a wire rack.

7. Eat it either warm from the oven, or leave to cool then lightly grill it.

To make this banana bread a lil more interesting, you could also add in chocolate chips or chopped dates before pouring it into your tin!
